Co-owner Gary Wichman has been in the pizza/restaurant business since he was a teenager over 25 years ago. He started working at several pizzerias in Lackawanna. When he was in his early 20’s he teamed up with John Rudnicki and owned and operated two taverns in Lackawanna. After several successful years, Gary, a little burned out from the bar business, moved to the Michigan area. After about a year out of the restaurant business, He was right back in it. He managed several chain sit down locations. When his Dad, Gene, became ill, Gary moved back to the WNY area and teamed up with John Rudnicki to open the take out pizzeria Papa Geno’s, named after Gary’s father.
Along the way, Gary learned that to make a truly good pizza you need to make the pizza dough fresh, right on site. You can never get a great taste from store bought or frozen dough. Its made right on site with Garys own recipe. The same goes for the sauce. It is made fresh daily with his own recipe. Next its always top quality cheese, not the cheapest available. It must be consistent. Finally all the topping must be top quality and fresh.
As far as submarine sandwiches, Gary found nothing beats the locally owned Costanzo’s Bakery for the rolls. Then, once again, only the freshest ingredients.
Gary is a graduate of St. Francis High School. He has two sons, Nicholas and Andrew, who attend St. John Vianney grade school.
His silent partner, John Rudnicki also is a St Francis High School Grad. He has a son attending St. Francis and a daughter at Mercyhurst University.
